"The Azonto meal"

"S. C".......another way to enjoy pasta with a deliciously savoury twist.

 The regular minced meat pasta with tomato sauce, mixed vegetable, sardines and chilli combo is definitely a great kick to satisfying that ferosious hunger. Sharp sharp every thing is mixed in the pot and cooked.

 But with a blend of rich classic ingredients such as Bacon and Eggs, you can cook your pasta in style and stay away from the regular.  Introducing an Italian dish, easy to cook with ingredients available at your finger tips....Spaghetti Carbonara.

For a serving of 6 here are the ingredients required:

  • Spaghetti ( 1 pound)
  • Vegetable or Olive Oil (1/4 cup)
  • Grated Parmesan or Cheddar Cheese( A Handful or 1 Cup)
  • 4 Eggs properly whisked
  • 8 Slices of  Bacon (Chopped)
  • Chopped Onions (1)
  • Chopped Garlic (1 Clove)
  • Parsley  (2Tablespoons)
  • Chopped Ginger(1/4)
  • Thyme (tablespoon)
  • Chilli pepper(1/2 teaspoon)
  • A pinch of salt

How to cook:

  • Boil pasta in salted water for 8-10minutes until al dente (Not overly soft).Toss in one tablespoon of vegetable oil and set aside.
  • On the other hand, stir fry chopped bacon in a large pan over medium high heat until evenly brown.
  •  Drain out "a bit" of the stork and set aside. Add a tablespoon of vegetable oil to what's left. Then add chopped onions, chopped garlic, thyme, chilli and  chopped ginger.
  • Scramble eggs in reserved bacon stork adding a pinch of salt then set aside
  • Pour spaghetti in a large pan , add the set aside cooked bacon sauce, scrambled eggs and parmesan cheese (cheese can be optional if you are not a fan)
  • Serve immediately and sprinkle some chopped parsley on top.

The nutritional information per serving  for fat is not more than 27.7g, cholesterol is 180mg and calories are 601


An African twist can be very well pleasing...while  cooking the bacon, you can add beef, spinach, crayfish sweet corn, sausages(hotdogs) and any orisirisi (variety) you want. Any chicken, bacon or beef stock seasoning would do.

 A side dish to this meal is diced fried plantain and gizzard, stir fried in blended tomato, peppers and onions. 

A glass of freshly squeezed orange juice, with a tint of  freshly squeezed lime and a dash of apple juice is just  the right drink. Great stuff!

                A glass of chilled white wine "Bertolli"  for a romantic setting is just romantofoodi....
